We partner directly with smallholder farming communities in Timor-Leste to produce the highest quality organic, specialty coffee using methods that care for the land and the people living on it.

Mau Ubo

Plum - Cacao - Maple Syrup

A perfect everyday coffee you can’t possibly tire of. Covering all bases with its huge body, it boasts big and juicy black plum notes with a rich lower register of cacao. Whether you’re brewing this for an esteemed guest after dinner, or for grandma at morning tea, you can rest assured it will impress. Ideal for espresso/stovetop brew methods, but don’t be afraid to brew this versatile coffee any way you like!

Tasakina

Chocolate - Malt - Nuts

This coffee coats the tongue and taps the cheeks in a subtle, cheeky kind of way. Rich layers of chocolate, malt, and nuttiness come through first, with a playful hint of guava sweetness dancing in the background, like a candied surprise. A careful sip might reveal a soft note of lychee woven through it all. Complex yet unintimidating, Tasakina has become our beloved in-house daily go-to.

Raegoa

Raspberry - Peach - Cacao nibs

This coffee is one to be cherished. The huge levels of sweetness will transport you to enjoying peach and raspberry gelato on a warm spring day. Cacao nib notes provide a foundation, whilst acidity levels are bright and humble. Fantastically complex, the Raegoa firmly plants Timor Leste among the world’s top class in coffee production. Best brewed with any filter method.

From humble beginnings as a hand-built coffee trike, our mobile coffee offering has since evolved into the popular coffee van you see today. Over the years, we’ve caffeinated all sorts of events across Melbourne and wider Victoria: festivals, farmers markets, weddings, corporate events, school fetes, conferences, sports games, council fairs and many more. 

We pride ourselves on being one of Melbourne’s best coffee vans for environmentally conscious events.

Not only is our coffee van kitted out with the best commercial equipment (which = maximum coffees!), it employs a reusable cup scheme to minimise waste and can run off a solar set-up when your event has no power - or if you’d simply prefer to minimise your footprint!

Our Story

Our Story

Timor Coffee Roasters started eight years ago as WithOneBean. We roast with purpose and precision. We are an experienced, dedicated roaster committed to two outcomes: an exceptional coffee experience for our customers and lasting prosperity for the smallholder farming families who grow our beans.

We source directly from the mountain regions of Timor-Leste, working alongside smallholder farmers who harvest by hand and process their coffee with careful washing and sun-drying techniques refined over generations. This close, long-term approach supports stable relationships, fair trading, and better returns at the farm gate. So quality and livelihood improve together.

Sustainability guides every decision we make. We prioritise environmental best practice in sourcing, roasting, and operating, backing methods that protect soil health, water quality, and local ecosystems. We choose partners who share these values, and we focus on responsible supply chains that strengthen communities while reducing harm to the land.

In the roastery, we treat every lot with respect. Each roast is profiled to highlight the distinct character of Timor-Leste’s terroir—balanced sweetness, earthy cocoa depth, and, in some coffees, bright tropical fruit notes. The result is coffee that is consistent, expressive, and built for enjoyment, whether it’s brewed at home or served in a busy café.
